Yet another customer recipe submission, this time from our friend Amy Rennie. She let me know that although she had never made homemade sushi before, it wasn’t difficult at all! Easy for any first-timer. First, you need to start with the perfect sticky sushi rice:
Perfect Sushi Rice:
-1 Cup shortest grain rice
-2 cups water
-2 tablespoons Rice Vinegar
-2 tablespoons sugar
-1 tablespoon salt
-Rinse and drain rice a few times.
-Cook rice for 15-20 minutes with a normal ratio of 1-cup rice to 2 cups water.
-When rice is cooked, move to a Pyrex or metal serving bowl.
-In a microwave-safe bowl, mix Rice Vinegar, Sugar, and Salt.
-Microwave for 30-45 seconds and stir well.
-Mix-in to rice and coat rice thoroughly with mixture.
-Allow rice to cool to room temperature before using to make sushi.
Veggie Sushi Ingredients:
-1 zucchini, sliced into skinny pieces
-Carrots, sliced thinly
-Avocado, sliced thinly
-Red bell pepper, sliced thinly
-Larrupin Dill Mustard (If you’re a lucky local and have this resource available!)
-Any other veggies you desire, thinly sliced
-Big sheets of nori (seaweed)
-Water for sealing the roll
-Spread cream cheese onto nori in the middle of the sheet.
-Add rice on top of cream cheese
-Add veggies in the same manner, on top of the rice
-Sprinkle with Cilantro
-Drip Larrupin over roll, if desired
-Place roll on roller, brush with water on both ends, and roll tightly.
-Slice SLOWLY to not tear your rolls, and enjoy on your Fire & Light plate!
Favorite Combination: Cream Cheese, Avocado, Zucchini, Larrupin. Yum!
Thank you so much Amy for your submission! We hope sushi lovers over the world can enjoy how easy a first time attempt really is!
